Gỏi mực
Nguyên liệu:
1kg mực tươi – 100gr củ kiệu muối chua - Ớt quả chín – 1 cây cần tây – Hành khô - Dầu ăn – Gia vị - Đậu phộng giã đập – Ngò rí - Một ít dấm - Đường - Nước mắm loại ngon.
Thực hiện
1. Mực chọn con còn tươi, không bị đứt dầu hoặc bị dập. Tước bỏ túi mực, phần xương sống, đầu rồi xẻ dọc, chia thành hai hoặc ba. Sau đó, dùng mũi dao khứa thành nhiều đường ngang dọc trên thân mực để khi chín, miếng mực có hình dáng trông đẹp và hấp dẫn. Ch mực vào xửng hấp khoảng 15 phút là chín.
2. Ớt quả bổ dọc, bỏ hạt, xắt sợi dài. Rau cần tây bỏ phần lá chỉ lấy cọng, rửa sạch, cắt khúc chần qua nước sôi để thật ráo nước.
3. Phi hành khô với dầu, rối vớt ra để ráo. Củ kiệu ngâm với nước sôi để nguội cho bớt chua, ngò rí rửa sạch.
4. Cho mực xắt lát, ớt quả, đậu phộng, cần tây, hành khô, củ kiệu, gia vị, chút dấm, đường, nước mắm ngon cùng với chút dầu ăn rồi trộn đều tay. Ăn với bánh phồng tôm và nước mắm chua ngọt rất ngon.
