Nguyên liệu (làm 3 ổ)
Phần bánh mì ngọt
4-4 1/2 tách bột năng.
1 gói bột nở khô.
1/2 muỗng cà phê bột nhục đậu khấu.
1 1/4 tách sữa.
1/2 tách bơ.
1/4 tách đường cát.
1/4 muỗng cà phê muối.
1 cái trứng.
1 muỗng canh rượu mạnh.
4/3 tách nho khô hoặc loại nho nhỏ không có hột phơi khô.
1/2 tách trái cây đã làm thành kẹo cắt lát nhỏ, bỏ vỏ.
1/4 tách hạnh cắt nhỏ.
1 muỗng canh vỏ cam cắt nhỏ.
1 muỗng canh vỏ chanh cắt nhỏ.
2 muỗng canh bơ tan.
Phần sương:
1 tách đường cát đã rây.
1/2 muỗng cà phê vani.
2-3 muỗng canh sữa.
Cách làm
Phần bánh mì : Trộn 2 tách bột năng, bột nở và vỏ nhục đậu khấu trong một cái chén trộn. Đun nóng chảo, cho sữa, 1/2 tách bơ, đường và muối vào, quậy cho đến khi hỗn hợp nóng (120-130 độ) và bơ cũng tan hết. Cho hỗn hợp bột năng, trứng và rượu vào 1 cái máy trộn điện, đánh ở tốc độ thấp khoảng 30 giây, cạo cho sạch trong chén, đánh ở tốc độ cao khoảng 3 phút. Dùng muỗng gỗ quậy nho khô, kẹo trái cây, vỏ chanh, hạnh, vỏ cam và phần bột còn lại cho tới khi nào bạn còn có thể quậy.
Rắc ít bột khô lên bề mặt miếng bột vừa quậy, nhồi để tạo nên một thứ bột nhồi mềm và đàn hồi (khoảng 3-5 phút). Làm bột thành hình tròn, đặt vào trong một cái chén có bôi mỡ, trở miếng bột, đậy lại và để đó cho bột nở gấp đôi (khoảng 1 1/2-2 giờ).
Đặt bột xuống mặt thớt, chia làm 3 phần. Đậy lại và để khoảng 10 phút. Lăn mỗi phần bột thành hình bầu dục 25x15cm. Đừng trải bột rộng ra, gấp một mặt lên khoảng 2,5cm với mặt đối diện. Ấn hai đầu nhọn để dán lại, đặt lên tấm nướng đã được bôi mỡ, làm tương tự với phần bột còn lại, đặt bánh lên cùng một tấm nướng khoảng cách giữa 2 ổ bánh là 5-7cm. Đậy lại và để nơi ấm khoảng 1 giờ.
Nướng trong lò ở 190 độ C khoảng 25-30 phút hoặc cho đến khi bánh vàng. Chuyển qua 1 tấm vĩ nướng, quét 2 muỗng bơ đã làm tan lên bánh ngay lập tức. Để nguội hoàn toàn.
Phần sương : Trộn đường cát, vani và lượng sữa đủ để tạo độ bóng và độ đặc. Phun lên ổ bánh mì đã nguội.
