Chả gìo
Thành phần :
1 bịch tàu hủ ky tươi
2 miếng tàu hủ
1 chén hành củ bằm nhuyễn
1 chén cà-rốt bào nhỏ
2 vắt bún tàu (miến)
2 chén nấm mèo ngâm nước cho mềm
1 hộp hamburger chay hay khoảng 2 chén thịt chay nào khác cũng được
2 muỗng cà phê bột nêm hay 1/3 muỗng cà phê muối và 1/3 muỗng cà phê đường
1 muỗng cà phê dầu hào chay
2 muỗng cà phê bột năng
3 cái trứng.
Chuẩn bị
Cắt tàu hủ ky tươi ra từng miếng nhỏ vừa để cuốn thành những cuộn chả giò dài hay ngắn theo ý quý vị. Ngâm nước bún tàu và nấm mèo cho mềm. Cắt bún tàu thành những sợi ngắn theo chiều dài của cuộn chả giò. Thái nấm mèo nhỏ lại. Cho tàu hủ miếng vào rổ cho ráo nước và bóp nhuyễn.
Ðể những miếng tàu hủ ky sang một bên, còn tất cả các vật liệu khác thì cho vào một tô lớn và trộn đều. Quý vị có thể nếm lại cho vừa ý trước khi dùng những miếng tàu hủ ky để cuốn lại thành những cuộn chả giò. Bắt chảo lên lò và cho dầu ăn vào chảo. Khi dầu vừa nóng, cho các cuốn chả giò vào chảo chiên lên cho vàng và dòn. Khi lấy chả giò ra nên để trên vài tấm khăn giấy cho thấm bớt dầu ra. Quý vị sẽ có được một dĩa chả giò thật dòn, thơm và ngon cho cả gia đình thưởng thức.
Tàu hũ kho tương
Thành phần
1. 3 miếng tàu hũ
2. 4 miếng hamburger chay
3. 1 muỗng canh tương đậu cay (hot bean paste)
4. 1 muỗng canh rượu Tây Ban Nha
5. Hành lá
6. Gừng bằm
7. Tỏi bằm
8. 1.5 muỗng cà phê bột bắp pha với 1 muỗng canh nước lã
Cách làm
Cắt tàu hũ ra từng miếng hình chữ nhật khoảng 2x1 phân và để ra rổ cho ráo nước. Bắc chảo lên và cho vào 3 muỗng cà phê dầu olive. Khi dầu vừa nóng thì cho gừng, tỏi và hành lá bằm vào cho thơm. Kế tiếp cho hamburger chay (bẻ nhỏ ra) và tương đậu cay vào chảo. Kế đến cho tàu hủ vào chảo. Ðợi cho vừa sôi lên thì vặng lửa nhỏ lại, nấu thêm khoảng 3 phút. Cho vào vật liệu số 8 và trộn lên cho đến khi sệt lại là xong. Lấy ra để lên dĩa và rắc lên trên mặt một ít hành lá cắt nhỏ thì bạn sẽ có được một đĩa "Tàu hũ kho tương" thật ngon và bổ.
