Cơm thập cẩm hải sản
Nguyên liệu:
1kg gạo
1 trái dừa xiêm
100g thịt hến (hay nghêu)
100g thịt nạc cua
300g tôm đất
50g sò điệp khô
100g đậu hòa lan hột non xanh
50g cà hộp
2 trái ớt
2 trái cà chua
Ngò, tiêu, muối, đường, bột ngọt, tỏi, dầu ăn, xì dầu, nước tro tàu.
Cách làm
Chuẩn bị:
- Gạo: Vo sạch, nấu với nước dừa xiêm, nấu trước khoảng 3 giờ. Nấu ráo.
- Hến (nghêu): Rửa sạch để ráo.
- Thịt cua: Ướp tiêu + bột ngọt.
- Tôm: Bóc vỏ, rút chỉ đen, chà chút muối rửa sạch, xắt hột lựu.
- Sò điệp: Ngâm nước cho đều, xắt hột lựu.
- Đậu hòa lan: Nước sôi cho chút muối + chút nước tro tàu, luộc đậu vừa chín xanh vớt ra rửa lại nước lạnh ngâm qua nước đá 5 phút vốt ra để ráo.
- Tỏi: Đập dập, bóc vỏ, bằm nhuyễn.
Chế biến:
- Bắc chảo lên bếp cho 2 muỗng súp dầu vào đun nóng, cho tỏi bằm nhỏ vào phi vàng, cho hến + tôm vào xào cho săn, cho sò điệp + cua vào xào đều. Nêm xì dầu + đường + bột ngọt + tiêu + muối, cho đậu vào xào đều nhắc xuống.
- Bắc chảo dầu khác phi thêm tỏi, cho cơm vào xào đều. nêm muối + đường + bột ngọt + xì dầu xào đều, cho tương cà chua vào xào đều. Nêm vừa ăn nhắc xuống. Trộn 1/2 nhân hến + tôm + cua + sò + đậu vào cơm cho đều.
- Ém cơm cho nóng vào khuôn hình tùy thích, thật chặt.
Trình bày:
- Trút cơm ra đĩa, trên để thêm 1/2 nhân còn lại. Để hoa cà + ớt + ngò lên cho đẹp.
- Dòn kèm chén xì dầu ớt thái khoanh
Cơm cuốn trứng
Nguyên liệu:
1 lon gạo - 2 quả trứng - thịt gà - thịt heo xông khói - cà rốt - cà chua - tàu hủ trắng - hành lá - nấm mèo đen - thơm và gia vị
Thực hiện
- Nấu cơm để nguội
- Nấm mèo ngâm
- Thịt gà, thịt heo xông khói ướp gia vị và xào sơ cùng gia vị như cà rốt, cà chua, tàu hủ... sau đó xắt thành từng lát dài độ 3cm và cao 5cm (chú ý xắt dài để cuốn cho dễ)
- Đánh trứng đều và đổ lên chảo mỏng để làm lớp vỏ bên ngoài của món này
* Trình bày:
- Bạn dùng lớp vỏ trứng ra mâm sau đó để lớp nấm mèo và lần lượt để lớp cơm khoảng 1cm.
- Kế tiếp lần lượt bỏ thịt heo xông khói, gà, cá rốt, tàu hủ, cà chua và chính giữa để vài cọng hành là.
- Sau khi đã để hỗn hợp các món ăn bạn lần lượt cuốn lại như hình trình bày.
- Kế tiếp bạn cắt cuốn này xéo 30 độ và trình bày ra đĩa. Món này kiểu cũng giống như món suhi của Nhật
