Mứt chùm ruột
Vật Liệu
- 1kg chùm ruột trái to vàng.
- 700g đường.
- 2 muỗng súp muối bọt.
- 1/2 muỗng cà phê thạch cao phi.
Cách Thức
- Chùm ruột bỏ cuống, bỏ trái hư, dập. Ngâm nước muối độ 2 giờ. Đặt từng nắm chùm ruột (khoảng 10-15 trái) vào giữa hai mặt thớt, xoay nhẹ mặt thớt trên cho chùm ruột ra bớt nước chua, xả lại nước lạnh, để ráo (giữ lại nước chùm ruột).
- Bắc nồi nước sôi cho chùm ruột vào trụng sơ rồi đổ ra thau, ngâm độ 10 phút, vớt ra rửa lại bằng nước lạnh thật sạch, để ráo.
- Cân lượng đường bằng lượng chùm ruột. Trộn đều rồi đem phơi nắng 1 giờ cho đường tan.
Thực hiện:
Cho chùm ruột + đường tan lên bếp sên lửa riu riu + nước chùm ruột. Khi đường gần tới, cho thạch cao phi vào trộn đều rồi nhắc xuống, để nguội cho vào keo. Khi sên đừng đảo nhiều.
Mứt dừa non
Vật Liệu
- 1kg dừa non
- 1kg đường cát
- 4 lá dứa tươi
Cách Làm:
* Dừa rửa sạch, lau khô, cắt sợi nhỏ, ướp đường 3 giờ
* Lá dứa rửa sạch, giã nhuyễn, cho vào khăn sạch vắt lấy một chung nước lá dứa, đem trộn chung với dừa
* Bắc dừa lên bếp sên trên lửa nhỏ, 10 phút trộn dừa 1 lần, đến lúc dừa gần khô phải trộn đều (nhưng phải nhẹ tay) để đường bao đều miếng dừa, đến lúc dừa thật khô nhấc xuống, trải rộng ra mâm hong gió cho dừa thật nguội, cho vào keo thủy tinh đậy kín
* Nếu các bạn muốn mứt dừa màu theo ý của mình, hoặc không để màu, thì
- Không để màu, thì không cần pha màu hay lá dứa thêm
- Để màu, thì pha màu ( loại phẩm làm bánh) thay cho màu lá dứa , và cách làm cũng giống như trên
Mứt gừng dẻo
Nguyên liệu :
- 1/2 kg gừng non
- 1/2 trái thơm vừa chín
- 2 trái chanh
- 1/2 kg đường cát trắng
Cách làm
- Gừng gọt vỏ, xắt sợi ngâm với nửa trái chanh trong 1 tiếng. Sau đó rửa sạch, luộc sơ trong nước nóng với 1/2 trái chanh, xả nước lạnh và để ráo .
- Thơm gọt vỏ, bỏ cùi, băm nhỏ
- Trộn chung gừng + thơm + đường, để qua đêm hoặc 3 tiếng cho tan đường.
- Bắc lên bếp sên lửa nhỏ, 5 phút trộn một lần để gừng không bị dính nồi . Sên tới lúc gần cạn nước đường, vắt vào 1 trái chanh, trộn đều , thấy mứt dẻo là được .
- Để nguội, bỏ vào hủ thuỷ tinh và để chỗ mát .. dùng từ từ
