Làm món lẩu
Lẩu cá kèo lá giang
1/. Nguyên liệu :
_ Cá kèo sống : ½ kg
_ Lá giang : 300gr
_ Rau đắng : ½ kg
_ Cà chua : 4 trái
_ Tỏi băm : 1M
_ Hành tím : 3 củ
_ Bún : 1 kg
Gia vị : Chanh , ớt , dầu ăn , nước mắm
Rau : muống bào , rau nhút , giá , bắp chuối bào , lá ngổ và ngò gai
2/. Cách làm :
_ Chuẩn bị :
+ Cá kèo để nguyên con rửa sạch nhớt , bỏ vào tô đậy nắp lại
+ Lá giang nhặt lá , bỏ dây , rửa sạch , để ráo , vò nát
+ Rau đắng lấy lá non , rửa , để ráo
+ Rau nhút nhặ rửa sạch , giá và muống bào , chuối bào cũng thế
+ Lá ngổ và ngò gai rửa sạch
+ Cà chua bỏ hột , cắt múi cau , phi hành tím xào sơ
+ Tỏi băm phi vàng
+ Hành tím bào mỏng theo chiều xuôi , phi vàng
_ Nấu lẩu :
+ 1,5 lít nước lạnh nấu sôi cho lá giang vào , nêm gia vị 1m muối + 2 m đường + 1m bột ngọt + 1m nước mắm ngon . Khi sôi nhắc xuống , nước dùng có vị chua ngọt là được
_ Trình bày :
+ Múc nước lèo ra lẩu , trên mặt để vài lát ớt , tỏi phi , hành phi , lá ngổ vàngò gai cắt nhỏ. Khi ăn nấu lẩu sôi mở nắp đổ cá kèo vào ( làm nhanh tay ) và dậy nắp lại , cá chín gắp ra đĩa , ăn nóng .
+ Xếp một dĩa bún , một dĩa các loại rau , một dĩa nước mắm ớt
+ Lẩu cá kèo dùng kèm với rau đắng , bún , chanh và nước mắm sống
(*) Muốn ngon hơn dùng 1,5l nước hầm xương heo thay cho 1,5l nước lạnh
Lẩu cá lóc
1/. Nguyên liệu :
_ Xương heo : 500g
_ Cá lóc : 300g
_ Mỡ hạt lựu : 50g
_ Bạc hà : 2 cây
_ Đậu bắp : 5 trái vừa
_ Cà chua : 2 trái
_ Bún : 500g
_ Sả bằm : 1M canh
_ Tỏi bằm : 1m café
_ Thơm : ½ trái
_ Me : 500 đồng
_ Rau ôm + ngò gai : 500 đồng
_ Gia vị : muối + đường + bột ngọt + nước mắm + hành phi .
2/. Cách làm
_ Giai đoạn 1 : chuẩn bị
+ Cá lóc làm sạch cắt khoang vừa ăn
+ Xương heo nấu nước dùng
+ Bạc hà , đậu bắp , cà chua cằt vừa ăn
+ Rau ôm ngò gai cắt khúc nhỏ
+ Me lược bỏ hạt
_ Gai đoạn 2 : nấu
+ Phi tỏi thơm , bỏ xả bằm vào , xà vàn thơm bỏ cá lóc vào trở qua lại , cá săn lại thêm 1,5 lít nước dùng , đun sôi ===> nước lẩu
+ Nêm : 2M canh me + 1m café muối + 4m đường + 4m bọt ngọt + 1m nước mắm
_ Gai đoạn 3 : trình bày
+ Xếp vào lẩu đậu bắp , bạc hà , thơm , cà chua , cho nước lẩu vào rắc rau ôm ngò gai , hành phi , vài lát ớt lên lên mặt
+ Lẩu cá lóc ăn với bún + nước mắm tởi ớt mặn.
3/. Yêu cầu thành phẩm
_ Nước có vị chua ngọt vừa ăn
_ Cá không nát , dậy mùi thơm của sả + rau ôm ngò gai .
