Xôi lá câm đậu xanh
Nguyên liệu
- 1 lít nếp tốt
- 1 bó lá cẩm
- 300g đậu xanh cà
- 250g đường cát
- 2 muỗng xúp dầu ăn
- 1 gói vani
- 1 chút muối
Cách làm
- Đậu xanh: ngâm nước cho mềm, đãi sạch vỏ, nấu chín với chút muối, tán nhuyễn.
- Cho đường vào chung với đậu, bắc lên bếp sên cho đặc, nhắc xuống cho vani vào.
- Nếp: vo sạch, để ráo nước.
- Lá cẩm: nấu sôi với nước cho ra màu tím, lọc lại lấy nước bỏ lá.
- Cho nếp vào soong, chế nước lá cẩm vào cho ngập nếp, cho thêm chút muối bắc lên bếp nấu chín.
- Khuôn thoa dầu ăn, múc xôi cho vào ½ khuôn ém chặt, cho lớp đậu xanh vào giữa, trên cùng cho lớp xôi đè lại thật chặt, xới ra dĩa trình bày tùy thích.
* Chú ý: lớp đậu xanh ở giữa, có thể thay bằng lớp chả lụa cũng được.

VẬT LIỆU :
- 1kg nếp ngỗng
- 6 múi sầu riêng
- 100gr bột mì
- 50gr bột gạo
- 300gr dừa nạo
- 300gr đường cát
- 3 trứng gà
- 3 muỗng súp sữa đặc có đường
- Chút muối
Cách làm:
Chuẩn bị
-Gạo nếp : Vo sạch, ngâm nước ấm khoảng 4 tiếng, xả sạch, để ráo nước, cho nếp vào xửng.
-Sầu riêng : Lựa loại chín mềm, dày cơm, ngọt, tách bỏ hột, dầm nát.
-Lá dứa : Bỏ gọn cho vào đáy nồi
-Trứng gà : Đánh tan, bỏ bớt 2 lòng trắng, chỉ lấy 1 trứng nguyên + 2 lòng đỏ.
-Bột gạo + bột mì : Trộn chung.
- Dừa nạo : Nhồi nước ấm vắt lấy 300cc nước cốt.
Thực hiện
Đặt nước sôi, cho xửng lên hấp xôi.
-Trong khi hấp, thỉnh thoảng rưới nước cốt dừa có pha một chút muối vào. Rưới khoảng 200cc nước cốt dừa là được.
-Xôi chín, trộn sầu riêng vào hấp thêm 10 phút nữa. Xôi chín, xới dĩa hay nhấn khuôn.
Cách làm nhân
-Bột gạo + bột mì trộn chung
-Nước cốt dừa + sữa + 100gr đường + trứng gà quậy đều, trộn chung với bột. Lược lại cho mịn.
- Đặt lên bếp nấu nhỏ lửa, đến khi đặc, mịn là được. Nếu muốn thơm và ngon cho 1 chút vani và 2 múi sầu riêng là được.
Cách dùng
Lấy xôi ra dĩa, trên mặt xôi trét phần nhân. Có thể rắc thêm chút mè rang vàng.
Xôi lá sen
Xôi nếp cuộn lá sen nhồi nhân tôm thịt. Xôi ăn nóng rất ngon.
Nguyên liệu:
Nếp ngon: 400g
Thịt thăn heo: 200g
Tôm khô: 50g ( Hay 100g tôm tươi )
Lá sen: 2 lá
Tỏi băm: 1 muỗng cà phê
Bột nêm: 1 muỗng cà phê
Đường: 1 muỗng cà phê
Cách làm:
Nếp nấu chín. Thịt heo cắt hạt lựu, tôm khô ngâm nước ấm cho nở mềm.
Nếu để tôm tươi thì lấy vỏ, và đường chỉ đen trên lưng tôm, sau đó, rửa sạch với muối, bằm nhỏ nhưng đường nhuyển , bằm tôm thành miếng)
Phi tỏi cho thơm rồi cho thịt heo, tôm khô vào xào,tôm tươi nêm đường, bột nêm vừa ăn.
- Lá sen luộc với nước muối, cắt lá sen thành miếng cỡ bàn tay. Đơm xôi nếp vào lá sen, cho tôm thịt đã xào vào giữa làm nhân.
Gói lá sen lại thành cuốn. Xếp các cuốn xôi vào xửng hấp độ 15 phút. Cho xôi ra dĩa trang trí với hoa sen. Xôi lá sen có thể chấm thêm với nước tương.
