Canh chua cá hú
Nguyên liệu:
1/2kg cá bông lau hoặc cá hú
400g măng chua
Muối, đường, bột ngọt
Nước mắm
Ngò gai, rau quế, ớt
100g hành tím bào
Cách làm
Chuẩn bị:
- Măng chua: Vắt ráo bớt nước chua, cắt miếng vừa ăn
- Cá: Chà muối rửa sạch, cắt khoanh 1-2cm bề dày chảo nóng cho 3 muỗng súp dầu + 2 tép tỏi đập dập, cho cá vào chiên sơ lấy ra.
- Rau om + ngò gai + quế, bỏ cuống dơ, rửa sạch thái nhuyễn.
- Ớt: Thái khoanh mỏng bỏ hột.
- Tỏi: Đập dập bóc vỏ bằn nhuyễn.
- hành tím: Bóc vỏ, bào mỏng phi vàng.
Chế biến:
2 lít nước lạnh nấu sôi cho cá vào, cá vừa chín vớt ra cho măng chua vào + muối, đường, bột ngọt, nước mắm + 1/2 rau ớt bào. Nêm lại chua chua ngọt ngọt nhắc xuống.
Trình bày:
- Cho cá vào tô. Múc nước canh măng + hành tím phi + rau + ớt. Món này dùng nóng với nước mắm nguyên chất + ớt thái khoanh.
Gà kho gừng hành
Nguyên liệu Gà mái khoảng 1kg-1,2kg, rửa sạch, chặt vừa ăn
Hành thái nhỏ, gừng thái chỉ - nhiều hay ít tuỳ người ăn
Nước mắm ngon, bột ngọt
Cách làm
Gà cho vào chảo, đảo đều. Nêm nước mắm, bột ngọt vừa miệng. Cho thêm một chút nước xâm sấp. Khi đã chín thì cho hành, gừng vào chảo. Ăn với cơm
