chè chuối
Nguyên liệu : ( 4 - 6 người ăn )
- Nước cốt dừa: 1 hộp 400ml
- 2-3 quả chuối tây.
- Đường, vừng, muối.
Cách làm
Chuối tây chọn quả chín, có vị ngọt đậm, ăn không chát. Chuối bóc vỏ, bổ làm tư theo chiều dọc và chiều ngang quả.
Vừng rang chín vàng, sẩy sạch vỏ, để riêng
Cho nước cốt dừa vào nồi đun vừa lửa, nêm chút muối, đường vừa ăn. Vừa đun vừa quấy đều tay, khi sôi cho chuối vào đun nhỏ lửa, thỉnh thoảng lại quấy nhẹ vài lần. Đun cho đến khi chuối chín mềm (đun từ 6-8 phút tuỳ vào độ cứng của chuối) thì tắt bếp để nguội.
Múc chè ra âu, rắc vừng lên trên rồi đặt vào tủ lạnh, khi nào ăn mới đem ra múc vào bát con.
Có thể ăn chè chuối ngay khi còn nóng cũng rất ngon.
Chè trôi nước
Nguyên liệu :
4 chén bột nếp
1 chén bột gạo
1 gói đậu xanh cà
1 bao đường thẻ
1 củ gừng
muối, nước cốt dừa, bột mì, mè
Cách làm
Hai thứ bột pha chung lại với nhau rồi để 1/2 chén nước vào bốp cho bột tan, kế đến cho nước nóng vào nhồi cho đến khi nào thấy bột dẽo mềm là được
Ðậu xanh ngâm 1 đêm hấp chín tán nhuyễn để khoãng 1 1/2 muổng càfê muối vào xào đều tay với một ít nước cốt dừa + 1 1/2 muổng càfê đường + 1 muổng càfê tiêu cho dẽo rồi để nguội, vo viên tròn bằng ngón chân cái để riêng
Bột cán tròn lớn hơn đậu một chút rồi cho đậu vào giữa bột vê tròn
Nấu nồi nước sôi thả bột thả bột có nhân đậu vào luộc chín (Notes: Nước phải thật sôi mới thả bột vào), bột nổi lên là chín, với ra bỏ vào thau nước lạnh
Ðường tán để 5 chén vào nấu cho tan đường, rồi bỏ bột đã luộc chín vào nồi nước đường, gừng đập dập bỏ vào cho thơm
Nước cốt dừa nấu sôi nêm tí muối + tí đường và (bột mì quậy với nước) đổ vào dừa cho sền sệt là được
Khi ăn múc chè ra chén cho tí nước dừa và rắc mè rang vàng vào
Chè thưng
Nguyên liệu:
- 1/2kg đậu xanh cà
- 350g bột năng
- 1kg đường cát
- 500g đậu phộng
- 200g khoai môn cao
- 1/2kg dừa nạo sẵn
- 2 ống vani, một chút muối
- 1/2kg khoai lang bí
- 1 bó lá dứa, 10 tai nấm mèo.
Cách Thức
Chuẩn bị:
- Đậu xanh: Ngâm nước một đêm, đãi sạch vỏ
- Đậu phộng: Ngâm nước nóng 2 giờ, lột vỏ
- Dừa khô: Vắt 1 chén nước cốt và 3 lít nước dão
- Khoai môn cao: Gọt vỏ, xắc hạt lựu, luộc sơ
- Khoai lang: Gọt vỏ, cắt khúc dài 1cm chẻ làm tư, luộc sơ để ráo nước (xắc hột lựu cạnh 1cm)
- Bột năng: Lấy 250g bột năng hoà với 400g nước lã cho đều, bắc lên bếp quậy cho bột đặc, nhắc xuống, tay xoa bột năng còn lại, se từng cọng dài độ 3cm, đem luột chín, dội lại nước lã, để ráo nước.
Chế biến:
- Cho nước dão vào xoong nấu sôi, cho đậu xanh vào nấu độ 15 phút, tiếp đến cho đậu phộng vào, kế cho bó lá dứa (lá dứa rửa sạch, cột lại).
- Đậu phộng mềm cho khoai lang + khoai môn cao và sợi bột năng đã luột chín vào.Khi tất cả đều chín, cho nấm mèo + 1 chút muối, kế cho đường nêm ngọt là được, cho nước dừa vào nhắc xuống cho vani.
Chè này có thể dùng nóng hoặc lạnh đều được.
Ta có thể cho thêm cơm dừa nạo xắt sợi vào chè càng ngon.
